If you are looking for a new sweet snack to make for upcoming parties or celebrations, may I suggest this delicous sweet and slightly salty cereal snack mix. Everyone who has ever tasted it has fallen instantly in love and I know you will, too.
During Christmastime I overheard some teachers talking about a dish on the goodie table in the lounge. A quick Pinterest search revealed several recipes that seemed to get at the same idea, so I picked one and made it. A little tweaking and this is my own version of Crack Coconut-Pecan Chex Mix.
My recipe doesn’t have quite as much of the buttery-sugar syrup that other recipes call for so there is more crunch left in the cereal, and I add a pinch of salt and splash of vanilla to the syrup. I also finish my mix with a sprinkly of Maldon Finishing Salt for that sweet and salty goodness.
You just can’t go wrong with Chex cereal-based snack mixes, right?
Crack Coconut-Pecan Chex Mix
4 cups Rice Chex Cereal 4 cups Corn Chex Cereal 4 cups Golden Grahams Cereal 2 cups coconut 2 cups chopped pecans 1 cup sugar 3/4 cup butter 1/2 cup corn syrup (light Karo) pinch Kosher salt 1 tsp vanilla extrace Combine cereal, coconut and pecans in a very large bowl. In a heavy saucepan, bring to a boil: sugar, butter, pinch of salt, and corn syrup. Stir constantly for 2 minutes then remove from heat. Stir in 1 teaspoon vanilla extract. Pour syrup over cereal and toss to coat. Divide mixture into two cookie sheets to cool. Toss and break apart while cooling.
This seems like the kind of recipe that you could change and make your own by trying different nuts or other types of cereal. Once you taste it you will know why i put the name “crack” in the title. (In savory dishes it usually means the dish includes ranch dressing mix and cream cheese.) In this case, it’s because you won’t be able to stop eating it, I swear!
