Homemade Mayo + 9 Variations to Spice Things Up

Homemade Mayo

1 ¼ cup canola oil

1 large egg

½ tsp ground mustard powder

½ tsp salt

Juice of ½ lemon

Wide-mouth pint jar

In a wide-mouth pint jar put ¼ cup olive oil, the egg, mustard powder and salt. Using a hand-held immersion blender, mix thoroughly. While the blender is running, gradually pour in the remaining oil- (the slower, the thicker the mayo will be). After the mixture has emulsified, add the juice of ½ lemon and blend or stir to combine. Taste and adjust seasonings.

Avocado Mayonnaise

To Basic Homemade Mayonnaise, add finely grated zest of 1 lime and ½ cup mashed and strained avocado. Use lime juice instead of lemon juice for the acid.

Basil Mayonnaise

To Basic Homemade Mayonnaise, add 4-6 tablespoons fresh minced basil.

Pesto Mayonnaise

To Basic Homemade Mayonnaise, add 1-3 tablespoons pesto.

Chipotle Mayonnaise

To Basic Homemade Mayonnaise, add 1 canned, pureed chipotle chile in adobo sauce. Use lime juice instead of lemon juice.

Chipotle & Roasted Red Pepper Mayonnaise

To Basic Homemade Mayonnaise, add 2 canned, pureed chipotle chile in adobo sauce and 2 tablespoons pureed roasted red pepper.  Use lime juice instead of lemon juice.

Cilantro Lime Mayonnaise

To Basic Homemade Mayonnaise, add 2-4 tablespoons minced cilantro and 1 clove minced garlic.  Use lime juice instead of lemon juice.

Garlic Mayonnaise (Aioli)

To Basic Homemade Mayonnaise, add 2 cloves minced garlic and extra drops of lemon juice.

Garlic Rosemary Mayonnaise

To Basic Homemade Mayonnaise, add 2 cloves minced garlic, 2 tablespoons fresh minced rosemary, and extra drops of lemon juice.

Horseradish Mayonnaise

To Basic Homemade Mayonnaise, add 1 tablespoon grated fresh horseradish.
